PINTA Kwas Theta 24,7°- it took nearly 7 months to brew this one! Why? First we brewed solid, chocolate and roasted RIS and fermented it with beer yeast and whiskey yeast. Additionally, a part of wort has been acidify with a fresh blend of lactic acid and then added to a beer. In next step we added 1000 liters of freshly squashed juice from Polish sour cherries to the beer, just to make sure that it will be more sour and it will have some fruity notes. In third step we "finished" RIS with wild yeast Brettanomyces. Kwas Theta is extremely sour but also roasted in aroma, chocolate-like and funky (thanks to Brettanomyces). Aftertaste is a little bit sweet, but also bitter and cherry-like. PINTA Kwas Theta 24,7° - sour, wild and fruity Russian Imperial Stout.

Butelka. Barwa czarna, nieprzejrzyste, nalewa się dość oleiste. Piana ciemnobeżowa, średniopęcherzykowa. W aromacie kwaśna wiśnia z delikatną nutą czekolady (kojarzy się z pralinami, ale to nie są takie typowe "wiśnie w czekaladzie"), poza tym wyraźna funky derka i skojarzenie z czerwonym winem. W smaku na pierwszym planie kwaśna wiśnia, prawie brak paloności, a całość bardzo wyraźnie przypomina czerwone półwytrawne wino. Jest jeszcze uczucie ściągania, również przypominające czerwone wino. Wysycenie niskie w stronę średniego, ale nie przeszkadza. Wbrew wrażeniu z nalewania wcale nie jest tak bardzo pełne, a wręcz przeciwnie. Goryczki brak. Alkoholu nie czuć praktycznie w ogóle. Ogólnie fajne piwo. Po prostu "inne", nie przypomina żadnego RISa którego do tej pory próbowałem. I może dlatego, gdyby nie etykieta, nie nazwałbym go RISem.

Clear dark brown to black beer, big foamy beige head, unstable, falls down quickly, little adhesive. Aroma: bit fruity, some red wine vinegar, roasted, notes. MF: soft carbon, medium to full body. Taste: very sourish, quite some tannins, fruity, citric acidity, sour cherries, bitter touch. Aftertaste: tannins, some chocolate, red fruits, dry, sour finish.

Black colour with ruby reflexes, minimal brown head. Intensive cherry, light coffee. Medium sweet, heavy sour. Very good!

Its extremely drinkable, jet black dark with rudimenta of nice top. Soury notes in the aroma, supplemented by cherries, with the warming some dark notes seem to appear. In taste there is a great bitterness like from american hops, its not too sour, which is great for me. Actually I think comparing to other Polish beers this is the level of Brett IPA (also by Pinta), its definietely less sour than Wild Black Kiss from Widawa. Therefore acidity seems to be controlled, deliberate and spot on. Cherries give nice sweet and soury notes to the beer. Palate is really complex. The only flaw of this beer is that typical Imperial Stout-like notes play the third role... They are quiet good in the aftertaste, and start to play little bit stronger note with warming...but still its more like wild cherry fes than imperial stout, maybe the impression of lack of body is from the cherries which make the beer really smooth and taste more like cherry juice than cheap cherry wine, but still I would have liked the RIS - side of the beer to be more underlined. Still its a great innovTove, revolutionary beer, which I would reccommend to anyone, even people who do not prefer sour beers (including myself). Still I am waiting for more thick bodied RIS from pioneers of Polish Craft Beer.
