it is our Saison van de Bruwer getting a makeover and becoming BRETT SAISON! Same recipe, still organic, and with the same personality marked by our Brettanomyces yeast.
As a reminder, it is a Spelt Saison, dry-hopped and fermented with added Brettanomyces. Blond, opalescent, aromatic and fruity, with a 'funky' touch typical of Brettanomyces, notes of cereals (especially spelt), a floral touch, and a final that evokes lime zests. Its attack is mellow, but its finish is dry and bitter.

Bottles from House Of Trembling Madness (2024) and The Beerhive (2025). Hazy pale golden body with a huge white head. Low carbonation. Faint lacing. Aroma of green apple, funky yeast, rhubarb and lemon sherbet. Flavour of lemon, lime and green apple with a dry, zesty finish. Medium body with a watery, slick mouthfeel. Light fizz. This is zippy and bright, despite both bottles being brewed 3.0 years and 2.5 years ago; the yeast has certainly taken effect.

Bottiglia. All'olfatto si esprimono sentori di sour. La finezza olfattiva è elevata, permanendo in maniera sufficiente. Il manto birroso superiore ha una buona tenuta. La grandezza delle bollicine è medio-fine. Il liquido appare velato. Bollicine fini costituiscono la forma della frizzantezza, con carbonazione persistente. Il colore è giallo dorato brillante. Il corpo è pieno. L'amaro è di media potenza e c'è anche una componente acidula in maniera pungente. La forza gustativa è elevata e la durata è buona. Le sensazioni boccali finali risultano di birra beverina. Il retrogusto è intenso. Sulla lingua si attestano note di frutta secca, un accenno di resinoso, agrumi, arancia, mandarino, erbe aromatiche, ananas, albicocche, cereali e sour.

Bottle purchased at Brasserie de la Senne in Brussels, Belgium. Bottled 12.11.22 Best Before 13.11.25 stamped on the label. The pour is a slight hazy yellow golden with a two inch foamy pure white head that falls slowly with nice lace. The aroma is leathery, funky Brett up top, with a nice straw wheat grain and soft herbal. Mostly about the big Brett character, though. The taste is funky, bitter, leathery, citrus peel, herbal, and the Brett returns and carries the long finish. The palate is medium bodied, active carbonation and the very dry Brett funk and leather finish.

Bottle at home in Hackney - picked up from HOTM. Pours mostly clear yellow with a tight, creamy white head. Light sweet flavour with sturdy, dry funk, earthy and grassy bitterness, pale wood, lemon peel. Light bodied with active, massaging carbonation. Dry finish with ample brett funk, assertive grassy bitterness. Sound.

Bottle at Cafe Frape Maastricht. Hazy pale gold colour lasting white head. Herbal saison aroma. Wow, a tasty saison farmhouse beer. Full of delight and surprise. It's really interesting. Plenty of hop on the finish. It has farmyard cereal damp hay then lemon and lime and hoppy bitterness. A real trip round a farm .

Bottle. Raynville. Hazed straw colour. Slim dense white foam. Looks boss. Bretty lemony and slightly wheaty. Not too much else happening. Taste is dry and lightly bitter. Very pithy. Dry as you like on the palate. Foamy carbonation. Pithy lemon bitterness to finish.

Bottle from HoTM. It ever so slightly hazy lemon yellow with medium fluffy white head. The aroma is rather fruity, sweet - sour, candied lemon, lemon sherbet, yellow plum, peach, mango, musty, barnyard, sweet manure and tangfastics. The taste is firmly dry, some bitterness, snappy, musty, damp hay, dry wood, brett, barnyard, spice, metallic twang, herbal, floral, bitter orange peel and campari with a drying, spicy lingering finale. Average body and moderate, fluffy carbonation. Taste isn't nearly as fruity as the aroma. Nice stuff anyhow..

Large foamy white head left a creamy top on a hazy lemon coloured body. Yeast, lemon & herbal aroma. Medium bodied, soapy & lightly carbonated with a dry back. Lemon, chalky, herbal, grassy & Brett & citrus tastes with a bitter finish. Cracking.
