it is our Saison van de Bruwer getting a makeover and becoming BRETT SAISON! Same recipe, still organic, and with the same personality marked by our Brettanomyces yeast.
As a reminder, it is a Spelt Saison, dry-hopped and fermented with added Brettanomyces. Blond, opalescent, aromatic and fruity, with a 'funky' touch typical of Brettanomyces, notes of cereals (especially spelt), a floral touch, and a final that evokes lime zests. Its attack is mellow, but its finish is dry and bitter.

ABV: 5.3%. Cloudy medium to light yellow colour with a average to large, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, wheat, spelled (spelt), moderate hoppy, herbs, zest, moderate yeast, saison yeast, brett - leather, yeast, light pepper. Flavor is moderate sweet and bitter with a average to long duration, yeast, funky - leather, herbs, saison yeast, sharp - brett - fruity, zest - sharp, super dry. Body is medium, texture is watery, carbonation is soft. [20201212]

Very good dense white head over fully hazy yellow-golden beer. Very herbal nose, garden herbs, chamomille in particular, other grains, yeast. Bitterish to bitter and really dry; again herbs, chamomille, yeast features. Dried herbs - herbal but not pharmaceutical. Finish and aftertaste are a nice interplay between hops and Bretts - a balance pretty difficult to achieve! Light body but with a creamy feel from the stable head. Medium to good carbonation. Normally this - often occuring - chamomille flavour sits wrong with me. Only this time, it turns out to be really classy!

Bottle @ Belgium. Pours hazy deep Golden with a White head. Brett and farmhouse. Earthy and chalky with a peppery and slight tropical bretty note. Funky. Super smooth and dry with the barnyard lingering. Dope

Bottle @ BXL Beerfest. Hazy blond colour, white foam. Very Orval-like flavour, dry, grassy, lots of brett. Good!

33cl bottle from Rob the Gourmetsβ Market in Brussels. F: medium, white, good retention. C: pale gold, milky hazy. A: citrus, orange, bit funky, cellar, passion fruits, green apples, yeasty, spicy touch, pineapple, gooseberries. T: medium malty base, dry fruity on the palate funky, brett, orange, lime, pineapple, higher carbonation, 60 IBU but nice harmonic long lasting bitterness, nice for the style, fully enjoyed.
