Dorée paille sur un col assez conséquent blanc et bien tenace.
Arôme présente ce bouquet funk - rustique hennuyer qui vient souvent caractériser DLS dans ses versions de Saison. Un léger bouquet de grains concassés complété par un apport plus noble des houblons mais aussi du brett qui envoie de fines effluves de fruits blancs - pêche de vigne, raisin blanc.
Palais monte de suite cette signature DLS retrouvée dans la Bruxellensis - un brett bien présent mais qui ajoute une bonne dimension au caractère rustique et bien sec de cette saison. Le caractère est funk sur un fruité oscillant entre des agrumes et une note d'abricot avec un fini rappelant un léger poivre blanc - effet du seigle?
Effervescence est bien placée et aide à diffuser ce petit pétillement de brett et de fruits le tout avec un effet de sécheresse qui perce juste après chaque gorgée.

330 ml bottle from Etre Gourmet, bottled 9 July 20. Dark yellow, hazy body, with a big, fluffy, lacing, off-white head. Aroma of apricot, leathery Brett, lemon candy, citrus, tropical fruits, flowers, dough, spices, some bread. Tastes pretty similar. Medium, a bit creamy mouthfeel, with an average carbonation. Finishes medium dry, medium spicy, a bit sweet, a bit dry, yeasty, fruity, citric, with Brett, dough, fruity hops. Tasty! So aromatic, with beautiful Brett notes, while also loads of fresh fruits and just enough malt body. Perfectly balanced, very quaffable and complex at the same time. Brettanomyces-refermented spelt saison, one of the newer Senne beers, many thanks to 77ships for the bottle! Thickly mousy, snow white, frothy, stable head on a misty yellow blonde beer with greenish tinge, turning into a warmer apricot blonde with sediment. Aroma initially strongly dominated by carbon dioxide, after which an array of rustic odours appears: ripe pear, green apple, clear 'Bretty' horseblanket, dry hay, dust, old herbarium plants, urine (the Brett again), lemonbalm, raw parsnip, unripe peach. Crisp, dryish onset, green apple again as well as hard pear and unripe banana, fizzy and minerally carb, supple body; grainy (even slightly sourish - spelt-wise) and white bread crumb-like maltiness, carrying the green fruit notes to a drying finish with strong spicy impressions of white pepper, lemonbalm and even dried dill, paired with a powerful hop bitterness, earthy and rooty without losing its refreshing properties, further dried by the effect of the wild yeast, which brings its familiar 'horseblanket' aroma into play, yet without overpowering the hops. Using other hoppy Brett beers (like the old Orval) for comparison, I can imagine this effect only getting stronger as the beer ages, at least within the first year or two, so this may be an interesting one to cellar for a while. In this younger form, a very 'Senne' beer indeed, thoroughly solid, quenching and pleasant to drink; has a 'classic' feel to it and some saisons brewed a century ago may indeed have been somewhat like this, but there is a modern streak to it as well, so I imagine this beer can reach a large beer-loving audience.
