it is our Saison van de Bruwer getting a makeover and becoming BRETT SAISON! Same recipe, still organic, and with the same personality marked by our Brettanomyces yeast.
As a reminder, it is a Spelt Saison, dry-hopped and fermented with added Brettanomyces. Blond, opalescent, aromatic and fruity, with a 'funky' touch typical of Brettanomyces, notes of cereals (especially spelt), a floral touch, and a final that evokes lime zests. Its attack is mellow, but its finish is dry and bitter.

33cl Fles van FoedersOnline. Holy funk, dit is flink doordrenkt met Brett. Mistig goudgele kleur, witte kraag. Erg Brettig, kazig, funky, fenegriek, droog, limoen, druiven, herbaal, fruitig zoetje, funky bittere finish. Lichte body. Lekker.

Opens with a loud “BANG”!
Little cloudy bright yellow beer, small creamy white head, pretty stable, bit adhesive. Aroma: very fruity, urinals, dirty brett, sewer, lots of sulphur. MF: ok carbon, medium body. Taste: very bitter, herbal, funky, dirty, brett, soapy bitterness, floral. Aftertaste: floral, soapy, perfume, very bitter, dry, herbal, lots of artificial brett. Not as good as I would have hoped. Weird artificial Brett character.

Thanks Maakun! Hazy pale golden with white head, dry and grainy with soft sweet citrus notes, big yeasty, bretty, bitter. Very nice.

Bottle at home. Bit hazy light golden, fluffy head. Lots of smelly Brett, pineapple, fruity hops, wheat, oats, bitter grassy and herbal notes, lots of citrus peel. Medium sweet and quite bitter. Medium bodied, slightly creamy. Damn I love this, really De La Senne, really well made and right up my alley.

Bottle: Poured a golden color ale with a super large white foamy head with good retention and some excellent lacing. Aroma of spicy yeast notes with some peppery notes with some rustic malt and dry Brett ester. Taste is a nice mix of rustic malt notes with some spicy and peppery yeast notes, some dry herbal hops notes with a super dry finish. Body is quite full with excellent carbonation. World-class saison that is a mix between Orval and Dupont.

Bottle. Color: Hazy pale golden, frothy white head. Aroma: Brett, fruity notes of peach and some citrus, lime. Taste: Prominent Brett funk and Saison yeast, moderate sweet and moderate to over moderate bitter, lightly tart. Fruity notes of peach and apricot, lime, orange, grapefruit, zest. Medium to even over medium bitterness, a lot of orange and lime zest and very dry mouthfeel at finish. Medium body, just below average carbonation. Very nice.
