it is our Saison van de Bruwer getting a makeover and becoming BRETT SAISON! Same recipe, still organic, and with the same personality marked by our Brettanomyces yeast.
As a reminder, it is a Spelt Saison, dry-hopped and fermented with added Brettanomyces. Blond, opalescent, aromatic and fruity, with a 'funky' touch typical of Brettanomyces, notes of cereals (especially spelt), a floral touch, and a final that evokes lime zests. Its attack is mellow, but its finish is dry and bitter.

Bottle 33cl. @home poured into a tumbler. Sour nose. Pours unclear pale golden, good moussy white head, good retention, light lacing. Aroma sour, brett, barnyard, unripe peach, quince, emon peel, grassy hops, retronasal brett and herbs. Taste medium sweet and bitter, brett, peach, quince, grain, herbal. Medium body, oily texture, soft carbonation, dry sweetbitter aftertaste, brett, herbs, husky notes, complex brew, well-executed, quite good.

A golden beer, a head is quite big and white. Aroma has green apples, barnyard, lether, grapes, bretta. Taste has fruitness and then strong bretta is there, barnyard. Medium bodied. Now the bretta is really there. Nice beer.

Bottle. Hazy yellow color with white head. Aroma is flowery, grassy, a bit cheesy feet. Taste is fresh, grassy, a bit lime, floral, good balance, soft, almost juicy, but with a bitter finish. Classic De La Senne character!

Bottle at the brewery, Brussels. Lovely funky Belgian smell. Some sour yeasty notes and some dry hops. I was loving the beer but the taste, when tasting seriously, is quite mellow. But at the end is a lovely strong Belgian boozeyness, bitterness and sour yeast. A classy beer and a joy to drink.

Hazy pale yellow colour with thin head. Aroma has Bretty sticking plaster and new leather mixed with a light wheaty, citrusy note. It's backed up in the flavour. The Brett yeast aids a decent level of bitterness in the finish. Despite the intensity of flavour it stays remarkable light and drinkable.
