This beer explores the dialectics of aging beers in Georgian qvevri and is driven by a romantic vision of making rustic beers with the unique energy of these ancient vessels. Qvevris are huge, handmade earthenware vessels that were traditionally used in Georgia to make and age wine. This method and dying art of winemaking could never be invented in the modern world, and reflects the depth of 8,000 years of winemaking history in Georgia.

This beer consists of a blend of spontaneously fermented beers aged for one year in qvevri buried in the ground with organic Riesling grapes from 2020 vintage, coming from winemaker Petr Nejedlík, and further year refining in oak barrels.

The unique “je ne sais quoi” mineral, rustic quality comes from the qvevri itself. Every qvevri is coated inside with beeswax. The clay and beeswax smell make for a very intriguing thing that translates well into the beer. It is bright, so drinkable and quaffable!

75cl Bottle. Split by SirAlex. Thanks. Pours cloudy golden Yellow with a small head. Barnyard, citrus and riesling. Fresh and crisp with a Slightly oxidized and woody note suiting it Well. Tasty! 4.2

Bottle pour at Arrogant Sour Festival 2024. Cloudy golden with small white head. Funk, citrus, grapes, tad vinous, tad sweet, medium sourness. Nice.

From 0,75l bottle shared at Arrogant Sour Fest, Reggio Emilia. yellow clear color, small white head. smells wood, oak, subtle funk, hay. Very nice smell. full body, soft carbonation. tastes herbal, earthy, grassy, peppery, tobacco. finishes lightly dry and lightly sour with notes of grass, earthy and tobacco notes. Nice to very nice one

Flaska från Métaphore, 2022. Backlog. Klar, ljusguldig med vit krona. Fint djup i både doft och smak. Fat, sultanas, en angenäm smörighet. Mycket bra.

Poured from a bottle at MBCC 2023, Red Session. Next-to-clear late straw coloured body, covering white head leaving rings of lace behind. Farmyard and grass on the nose, hints of grapes. Ripe fruity flavours, joined by yeasty fruitiness and green grapes, followed by a drying close. Okay cleanser. (Copenhagen, 06.05.2023).
