Outdoor Lambik
Maurice is een verhaal van passie en inspiratie. Passie voor het oude brouwers-ambacht en inspiratie van een oude meesterbrouwer; Maurice Heyvaert (†). Deze lambiekbrouwer leerde mij dat lambik veel meer is dan zuur bier. Het gecompliceerde brouw- en vergistingsproces, de kunst van het versnijden van jonge en oude lambik, de magie van het rijpingsproces. Het resultaat: een beendroge, fris-zuur sprankelende elixer dat veel meer is dan bier. Het is de ziel van het pure brouwersvak en mijn eerbetoon aan mijn allereerste mentor en inspirator.

Een traditionele lambiek, met hergisting op fles, een blend van eenjarige en driejarige lambiek. Het resultaat is een beendroog, zachtzuur bier met kenmerken van een Fino sherry.

Pours unclear warm amberblonde. MEdium small white head fades fast, but not instantly. Scent is fairly mild on the funk, oak and lactic, almost like a AMLAM more than a lambic. Less agressive and fruity though, creating an experience that's more of a stand-alone. Taste is very phenolic (caught me a bit by surprise here) , brett, wood (very outspoken wood, even tannic - are these fresh barels?) and quite damn bitter (most bitter geuze-style to date to me) Acidity is mild. The beer isn't that balanced to me, bitterness should be way down, acidity (way) up , and a more complex yeast/funk character to be really 'in style'. As a beer on it's own, I still think this is far to bitter for it's balance. Shame, I expected quite a bit more of this one. As a huge fan of Sherry (Fino being one of them) I have no clue as to why the label states it has qualities of a Fino Sherry - it simply doesn't, nowhere near. I say this with the absolute most respect to Ronald, a very talented brewer, but this beer - if a Geuze style is the goal, should be tweaked quite a bit. If a Fino-like beer is the goal, perhaps it's best to start with a blank page.

Golden with a white head. Earthy, musty apartment, some citrus, old moisture. Medium body with a slight bite. A bit simple but nice.

750mL bottle at the International Geuze & Kriek festival. Pours murky blonde with a white head. Musty upholstery and some citric peels on the nose. Flavour has old furniture, musty upholstery, moldy fruit. Not bad.

750mL bottle at International Geuze & Kriek Festival 2025, pours a clear pale golden blonde with a small white head. Aroma has light phenolic notes, with light leather, a touch of funk, and earthiness. Flavour has phenolic notes, gentle funk, and light leather. Too much phenolic character, but some nice funk. It’s alright.

Bottle shared at my birthday tasting in honour of Maurice! Hazy golden, short lasting white head. White wine, funk, sulphur, weedy green leaves, caramel, vanilla, oak. Medium sweet, less bitter, ligt sour. Over medium bodied. Not amazing, but a great name and lovely to share with actual Maurice.

Hazy orange golden beer with a white head. Aroma of tart apricot, apples, white grapes. Taste of sour white grapes, brett, apricot, good!
