Dark Imperial Wit Ale brewed with Spices

Wassail is known for warmth and spices. Our rendition goes leaps and bounds beyond a traditional winter warmer, drawing inspiration from the dark, spiced ales from Belgium and our love for experimental brewing in SoCal. This dark imperial wit ale features spices to complement the spiced notes imparted from the yeast and prance upon the rich, dark fruited character of the specialty malts.

Tap at the Beer Geek Bar, Prague. Poured a clear dark brown colour with a thin light tan head. The aroma is roasted malt, light red berry fruits, aromatic hop. The flavour is moderate to light sweet light bitter with a smooth, roasty, fruity, herbal, spicy, light amaretto palate. Medium bodied with soft carbonation. Can’t say I really enjoyed this but it had to be done.

Bottle at share. Dark, near black, ring of head. Aroma is sharp and sour. Sour stout? Sweet taste, chocolate, slick. Not sure what is going on here. Not sure I'm digging it.

Bubbly tan coloured head left a good cover on a jet black still body. Sweet spice, chocolate & red berry aroma. Full bodied, oily smooth - just slides down. Sweet citrus, chocolate, berry, spices & dark spirit tastes. Outstanding!

Keg at CBC Covent Garden, 20/11/18. Light black with a decent tan covering that thins edgeward. Nose is big on fruit cake esters, spice, winter cheer, treacle toffee, brown bread. Taste comprises fruit cake, spice rack, toffee, dried fruits, brown sugar melt, hint of Jamaica ginger cake. Full bodied, fine carbonation, semi drying close with a light boost. Solid.
