Dark Imperial Wit Ale brewed with Spices
Wassail is known for warmth and spices. Our rendition goes leaps and bounds beyond a traditional winter warmer, drawing inspiration from the dark, spiced ales from Belgium and our love for experimental brewing in SoCal. This dark imperial wit ale features spices to complement the spiced notes imparted from the yeast and prance upon the rich, dark fruited character of the specialty malts.

Keg. shared at craft beer Co Covent Garden. 20/11/2018. Many thanks to Daniel. A oily dark brown black coloured pour with a halo go tan head. Aroma is big cinnamon, wood, bark. Apple. Flavour is composed of bark, woody cinnamon. Black apple, brown sugars, palate is black toffee apple. Palate is semi sweet, oily, lowish carbonation. Ok.

Keg at CBC Holborn - London. Pours deep brown with a creamy tan head. Loads of holiday spicing, nutmeg, fruitcake, brown bread. Medium to full bodied with fine carbonation. Lightly warming finish, lots of mincemeat pies. Novelty but fun.

750ml bottle. Spicy, dark and slightly roasty with some earthiness, nutmeg, cinnamon, raisins and syrup. Okay, quite spicy but pretty well balanced.

Draft @ Taproom, Malmö. Pours a black color with a small off-white head. Has a fruity wheat malty spicy caramel aroma. Fruity wheat malty spicy caramel chocolate and dark fruit flavor. Has a fruity wheat malty spicy caramel and dark fruit finish.

Bottled. A black beer with a lazing brown head. The aroma has notes of , caramel, cardemomme, cloves, all spices, other spices, lemons, and roasted malt. The flavor is sweet with notes of roasted malt, citrus fruits, wheat, and lots of spices among them cardemomme, cloves, and all spice, leading to a dry spicy finish.
