Dark Imperial Wit Ale brewed with Spices

Wassail is known for warmth and spices. Our rendition goes leaps and bounds beyond a traditional winter warmer, drawing inspiration from the dark, spiced ales from Belgium and our love for experimental brewing in SoCal. This dark imperial wit ale features spices to complement the spiced notes imparted from the yeast and prance upon the rich, dark fruited character of the specialty malts.

THT April at Kwartje, Gooey/Geoduck Edition. Bottle courtesy of MarkoDL. Black with greyish head. Sweet roasted malts, caramels, coriander, seaweed, lapsang souchong. Loads of spices and nice malty underlayment, Sinterklaasschuimpjes. Moderate sweet and bitter. Over medium body and soft carbonation. Interesting stuff.

8 3 8 3 16 Bottle shared at THT April (Clam Digging For Geoduck edition). Dark brown with a ring tan head. Aroma of yeast, coriander, malt, herbs, ginger, nutmeg, cinnamon, cloves and dried fruits. Flavour is light heavy sweet and moderate bitter. Above medium bodied with soft carbonation.

Bottle shared at THT April. Almost black with dark beige head. Strong coriander, sweet malts, bread, orange peel, quite some spices, blue curaΓ§ao, light ginger, toffee, licorice, aniseed, light peppers. Quite sweet and medium bitter. Full bodied. Quite some spices, some balance from the strong sweet malts. Not bad but it gets old fast.

Bottle at tht. Aroma of yeast ester, coriander, nutmeg, malt and ginger. Taste has anise, coriander, spicey, nutmeg, wheat, malt, orange, cinnamon and ginger. Quite weird, but interesting.

Bottle. Black beer with a tan head. Wheat and light roast aroma. Wheat and caramel flavor with light red fruit. Medium bodied. Wheat and caramel linger with light red fruit.

Sampled at Trails End. Pours dark brown, with a medium, dense, frothy, tan head. The aroma is apple pie, molasses, pecans, and orange peel. Sweet and fruity, with good spice. Medium body, with a syrupy, spicy, and oily mouthfeel. This is a fun and focused spiced beer. Very christmasy.

20th Feb 2018; Shrewsbury Beer Exchange Group meeting in Chez Sophie. 750 ml bottle from me (via the Dana Point Trader Joe's). Dark, slight haze, tanned topping. Herbal, spicy nose and taste; coriander and liquorice stood out for me, semi-sweet in the mouth, didn't like the late Ginger based heat in the finish. The score would have been higher if the Ginger wasn't there.

75cl bottle @ monthly tasting, Chez Sophie, Feb 18. Thanks to haddock for this. Pours hazy dark brown, small mocha head. Aroma has some confident spice, sweet. Taste is initially quite nice, dark sweet, almost dubbel-like and rich before being rapidly overtaken by spice-forward character on the back of the palate. Lots of assorted spices jostling for attention. Nice.

From a 75 cl bottle.it is a dark cola color with a quickly receding tan head. The Aroma is sweet with hints of Cloves and the taste is sweet with hints of candy cane, cloves and molasses

From a 75 cl bottle. Pours a clear deep cola with a quickly receding tan head. Spicy aroma. Flavors are sweet with Christmas spices predominate. Smooth and mellow finish.
