Same recipe, same pepper, but slightly more focused on the Lambic side compared to the first blend.
The spicy, fruity, and obviously peppery side is still very present and harmonizes superbly with the natural power of our Lambic.
The name of the beer comes from the inhabitants of the neighboring land, the Ashanti Kingdom, who were famous traders of this pepper.
This pepper is available to purchase at Sandrine’s store, Misao La Maison des Poivres, in Brussels. She also collected the pepper left over in the tanks after macerations and then dried it. This Lambic-infused version is also available to purchase at Misao.

Tap at Be.Re., Rome, Italy. Pours loaded gold, with almost no foam. Aroma is fruity and Himalayan pepper, orange peel. Body is average, with almost no carbonation. Taste is medium sour, with some bitterness and peppery feeling. Final is still pretty intense, pungent.

Bottle, bottled 26? May 2025. Color: Lightly hazy orange amber, dense off-white head. Aroma: Peppery, spicy, fruity lime and subtle funk. Taste: Clearly present yet subtle peppery, spicy notes, fruity lime and stonefruit, earthy, funky hints and some oak wood. Nice spicy and refreshing tart fruit combination from start to finish. Dry-ish, peppery mouthfeel at the finish. Very well balanced. Medium body, below average carbonation. Moderate to over moderate tart. Very nice.

2025 bottle. Cloudy rosy amber with a fluffy white head. I love good pepper and the aroma of it is great here, with gentle old lemon and some apricot stones behind. Creamy. Perhaps there's a slight medicinal quality to the pepper/ gentle lemon combination. Only a little sour, not really funky. Refreshing with the pepper providing the finish. Deft, tasteful. Part skill, part imagination and part taste.

Clear golden with a white head. Floral, lightly funky, peppery, rosemary, thyme, and some barnyard bites. Some citrus pops in the finish along with lingering herbs. Bright throughout. Really lovely pour. (Bottled June 2024)

Bottle 2023 vintage @ Café Pardaf. Amazingly smooth lambic with mild funk, perfectly balanced acidity, slightly sweet and some pepper in perfect balance with the beer itself. Fine balanced body as well, with a long lasting, smooth and pleasant aftertaste. This was really nice and quite original.

(Keg at Stadin Panimobaari, 20251120) The beer poured golden and hazy. Its head was small and white. Aroma had black pepper, fruitiness, honey and tartness. Palate was medium bodied with medium carbonation. Flavours were tartness, black pepper, sourness, fruitiness, grapefruit and bitterness. Aftertaste had black pepper, tartness and bitterness. A pleasant blend of strong flavours.

Bottle, 75cl, at Cafe Pardaf. 2023 vintage. A delicious brew, peppery, perfumed, woody and lightly funky. It has some body too, without being sweet. It's not too tart either, it's just really balanced. And the pepper works just fine here. Love it. 949417 251108
