It's been 2 years since we first brewed our beloved Mosaic pale ale, Carmen. During this time we've seen lockdowns come and go, 5 prime ministers, many changes to how we brew Carmen to get the beer how we like it... we even had a batch brewed for a well-known subscription company brewed in Antwerp. And now to celebrate our love of Carmen, we've decided to brew a DIPA version. Using the same grain bill and yeast but amped up the quantities, we then used Mosaic Cryo hops to give that tropical oomph you've expect from a 100% mosaic NE DIPA.
