A collaboration with Brasserie De La Senne

‘Terf’ first saw the light of day in July 2020. This local wheat beer was brewed
by Brussels-based Brasserie de la Senne using old wheat varieties from the cereal collective of Brouwerij 3 Fonteinen from Beersel in Brabant. Part of the brew was immediately drawn onto small bottles and sold out immediately.

Another part of the brew matured further for three years in oak lambic barrels. In November 2023, this ‘matured’ Terf was lit with young 3 Fountains lambic, in a 55/45 ratio. This Wild Terf is the fruit of collaboration between brewers and farmer(s) around Pajot landraces and with a fair income for the farmer. Above all, it is an ode to the historical agricultural link between the Brabant countryside and Brussels.

Pours orange with a minimal white head. Aroma: funk, wild yeast and oak barrels. Taste: wild yeast and oak barrels. Funky.

750mL bottle, pours a hazy golden orange with a small white head. Aroma has rustic saison yeast, gentle barnyard funk, and a touch of wet wood. Flavour is vibrant and complex, with lots of barnyard funk, rustic notes, citrus, and a touch of wet wood. Real nice complexity — definitely feels like half saison and half lambic. Excellent.

375mL bottle at Lambik-O-Droom. Pours murky blonde with a white head. Gentle funk and fermented fruit skins on the nose. Flavour has a light strawberry character, moderately bitter, good funk. Pretty solid.

Bottle from 3 Fonteinen pack. Color: Hazy golden, white head. Aroma: Wheat malt, funky yeast, some lime. Taste: Smooth wheat malt, notes of lime, moderate tartness, subtle funky yeast, oak wood notes. Dry finish with a nice amount of floral and subtle citrus hopbitterness. Medium body, low carbonation. Somewhere in between Geuze and Wheat beer, starting definitely more to the Geuze side but finishing more to the wheat and bittery side. Very nice.

Head gone in an eyeblink; uniform orangey ochre beer. Other grains, wheat with even a whiff of clove, sourish aromas. True to the blurb, this has both wheatbeer & lambicflavours. Faint horseblanket & farmyard; other grains and some dull herbal bitterness, with even a pinch of guaiacol. Ultra dry finish. Better than light bodied, almost no carbonation. I would have expected something more exotic from these two giants.
