A collaboration with Brasserie De La Senne
‘Terf’ first saw the light of day in July 2020. This local wheat beer was brewed
by Brussels-based Brasserie de la Senne using old wheat varieties from the cereal collective of Brouwerij 3 Fonteinen from Beersel in Brabant. Part of the brew was immediately drawn onto small bottles and sold out immediately.
Another part of the brew matured further for three years in oak lambic barrels. In November 2023, this ‘matured’ Terf was lit with young 3 Fountains lambic, in a 55/45 ratio. This Wild Terf is the fruit of collaboration between brewers and farmer(s) around Pajot landraces and with a fair income for the farmer. Above all, it is an ode to the historical agricultural link between the Brabant countryside and Brussels.

Bottle at Billies. Hazy golden, not much head. Grassy hops, bitter herbal notes, crisp biscuit malts, lots of funk and dry cellar. Medium sweet, sour and bitter. Medium bodied. Tasty!

Senne's 'Terf', a wheat ale diverting from the classic Belgian witbier standard, backblended with 3 Fonteinen young lambic and therefore technically a 'versnijbier' or 'coupagebier'; 37.5 cl bottle at Lambik-o-Droom, still without label at that point. Snow white, tiny-bubbled, dense, shred-lacing, thick head on a hazy ochre-tinged peach blonde robe. Aroma of pickled apricots, wet oak wood, lemon rind, yoghurt, sweaty feet, green gooseberries, sour plum, Granny Smith apples, stale orange juice, dandelions, hint of farmland, old bread. Tart, estery, bit 'wild' onset, mixing green gooseberries with sour grapes, unripe mandarin and yellow plum, moderately carbonated with soft, sleek mouthfeel; sourdoughy, wheaty core, clearly lambic-y plus wheat ale-like, with ongoing yellow-green fruitiness, drying lactic sourness and earthy notes, adding a hint of dandelion but remaining fairly low in hop bitterness. Quite an eventful finish, though, with vinous effects (oxidized dry white wine), green apple accents, woodiness and earthiness, with a dash of Brett; remains altogether softly tart, a tad 'dirty' yet still very elegant, with a lingering citrusy effect adding brightness. Highly drinkable, entertaining and frankly deliciously clever blend of styles - but "Brett eats everything", as they say, so this feels more like a soft lambic than a true lambic-wit blend. Delicious, even better than I was expecting, really. One I would love to revisit.
