An emerging style of IPA from San Francisco that utilizes amyloglucosidase an enzyme that breaks down complex sugars so that they can be metabolized by brewer's yeast. The result is a bone dry beer where hops can shine. Light malt and late hop additions are the focus for less hop-bitter effect. Double dry-hopped with Falconer's Flight and Mosaic hops lend a floral, citrus and tropical character.

16 oz pour on draft at Mad Fox during their 2018 anniversary party. Nonic pint glass. Clear golden orange with off-white head. Aromas of light funk, citrus, floral. Tastes of white wine, grapefruit citrus, floral, pine. Medium body with a dry finish.

Draft at Mad Fox's 8th Anniversary party. Poured a clear, golden yellow color with a medium sized white head. Aroma was juicy citrus. Dry yeast character. Flavor was nice juicy hops. This was really easy to drink and really tasty. Nice carbonation level. Really smooth, tasty.
