We brewed this beer in hopes to emulate a more historical version of a Bohemian-style pilsner. By using using Weyermann, a light and dark Bohemian floor malt, and fermenting this lager in our open fermenters, we created a richer mouthfeel, a deeper color, and a more "rustic" flavor profile more representative of lagers produced hundreds of years ago in the Czech Republic; when malts had less consistent attributes and beer was not fermented in tall stainless tanks.
