Tom flew to CA in June of 2021 to brew with Vinnie on the 5 BBL Windsor brew system. After primary fermentation, the beer was transferred to Hogshead oak barrels that had just been emptied of Sonambic – Vinnie’s spontaneously fermented homage to the Lambics brewed in Belgium. Tom flew back to California in December to assist in the blending of the beer we brewed in June. We used some of the Sonambic that was emptied from those Hogshead barrels. Blonde sour ale with notes of peach and pear. Soft, pillowy carbonation.

Bottle thanks to JMFP. Pours a hazy gold with small white head. The aroma is citrus, oak, yeast, floral. Slick body, citrus, melon, oak, funky, tart, very nice.

Bottle at Monk's pours gold with white head. Aroma is some acid, hefty fruitiness, funk. Taste is slightly woody, little acid, fruitiness. Solid.

Tap at the monks cafe in Philadelphia PA. A light hazed golden orange coloured pour with a small off white head. Aroma is semi sweet, delicate funk, vinous funk, grape, fuzzy peach gooseberry. Flavour is composed of prickly sour, nectarine, pinch of citric acid lacto. Light oak tannin, vinous funk, peach.. Palate is soft, prickly sour, light acid, airy carbonation.. Really nice.

Bottle shared at Monks Cafe Philadelphia. Pours hazy golden orange with a thin white cap. Aroma is light funk, apricot, peach, oak, white grape. Taste is peach, apricot, oak, light subtle funk, white grape. Lovely balanced and mellow sour. Great stuff

On tap at Monk’s Cafe in Philadelphia. Hazy yellow gold pour. Small creamy beige head. Funky farmhouse nose. Soft, creamy mouthfeel. Sour peach, apricot and preserved lemon. Easy drinking and and smooth. Faint oakiness on backend. Outstanding.
