The bottle conditioned version of our Ghosts of Antiquity. A harvest Grisette of sorts featuring a multi grain base of barley, wheat, and oats. Expanded upon with Estate grown Cascade from our Northern PA outpost, Second District Vineyard, and vintage Styrian Goldings. Fermented with a spicy farmhouse ale yeast that is quickly becoming one of our favorites before dry hopping carefully with East Kent Goldings. In true Saison style, bottle conditioning lends this ale an even drier profile due to refermention in the bottle up to 3 volumes of c02. The result is an extremely bubbly quaffable beer with a dense rocky head, fitting for everyday sipping and special occasions alike. Bottle: pours yellow with fizzy head. Light bretty notes, peppery, lemongrass. Taste is tangy, spicy, lightly bitter. Effervescent and smooth.
