Perpetua wild aged Bruin with damsons. sourness is just spontaneous. no brett nor bacteria were added. Fermented in stainless steel, it is then added to the perpetua blend that is ageing in oak barrels since 2016. This procedure allow us to moltiplicate the barrel microflora through a sort of Solera method. The beer is then macerated for 2 months on fresh handly-pressed damsons (Ramasin cultivar from Piedmont).

Bottle, shared by mansquito. Pours dark brown. Tart, vinegar, nutty, plum, funk, raisins. Medium body. Good.

Bottle: pours light brownish with small head. Aroma is berryish, vinegar, grape... I guess it is really damsons, but I really don't know what those taste like. Taste is fairly acidic and somewhat sour. Pretty good.
