A couple of years ago our good pal Dean dropped off some wine barrels that he sourced and asked if we could fill it with his favorite style of beer-
We brewed the base Grisette in early March of 2021 and fermented in stainless to complete dryness. A month later it found its way into the barrels for its long slow slumber and mixed culture fermentation. Dean then brought over the fruit from his family farm and in they went.
Sitting on the fruit for nearly 2 years, extracting all of goodness and converting those sugars into a beautiful “funk” it was finally ready to bottle. Refermenting in the bottles for 5 months, building up its natural carbonation, this gem exudes aromas dried cherries, pink rose, and hibiscus.
