Baklava is a dessert beer fit for a Sultan. A long boiled Imperial Stout with a complex grain bill that features a two day cold extraction of the specialty dark grains and heaping additions of brown sugar and clover honey. The beer was then rested in freshly emptied rye whiskey barrels from Frey Ranch and Bardenay with copious amounts of house toasted pistachios, walnuts, and hazelnuts for six months, before being finished with cinnamon and vanilla and bottle conditioned with additional honey.

On tap at the brewery pours out black topped with a tan head. Nose is nice bourbon barrel vanilla toasted nuts chocolate. Taste is more of the nice sweet chocolate rich bourbon barrel vanilla great toasted nuts and some heat.

Draft at Alehouse. Black pour with a thin ring of beige foam. Big boozy aroma, strong, alcoholic. Taste follows with more alcohol, vodka tasting up front. Any of the stout/ pastry elements are buried in the background. Too much booze.

On tap at the Fairview BP. Black pour. Thin ring of mocha Bubbles Intense sweet chocolate and hazelnut aromas and flavors. Very light on the darkness and bitter bite and also under carbonated. A pastry stout yes. It still is quite sweet and desserty. Flavors are wonderful though
