Have you wondered what exactly makes our Cryptoporticus a “Philly Sour” as opposed to a sour DIPA? If so, you should know that the name refers to this beer’s yeast! 🔬
The yeast, a strain of Lachancea thermotolerans, was discovered in an interesting place. Found on the side of a dogwood tree in a Philadelphia cemetery, it has begun making serious waves in brewing industry. Streamlining and simplifying a classic sour’s brewing process, we have been more than pleased with the yeast’s results!
