Sauvin is a blend of a rustic saison and longer aged wild ales (3 up to 5 years) dryhopped with Nelson Sauvin hops for over a year in one of our Bourgogne foeders.
In the nose you will come across white wine grapes and melon notes from the Nelson Sauvin hops. Accompanied by dusty, oaky and a citrus aroma’s from the base beer. In taste you will experience a slightly bitterness and herbal notes like thyme from the hops, a balanced sourness with a fairly dry woody finish.

Bottle, directly from TS. Color: Lightly hazy orange amber, white head. Aroma: Subtle mix of funk, fruity grape, wood and hop. Taste: Well balanced blend of white grape, hints of melon, subtle rural funk, oak wood, moldy hints, citrus fruit and herbal hop. Light to moderate tart, light bitterness and a little sweetness. Medium body, below average carbonation. Dry and almost a bit creamy mouthfeel. One more very nice TS beer.
