PHAZOTRON is a sessionable wheat beer that was fermented using the resident wild yeast from house-crushed Merlot grapes from Colterris Wines in Palisade, Colorado. The grapes were used not necessarily for flavor, but for the microflora that is resident on the skins, allowing for a type of spontaneous fermentation which is quite different from our normal use of a coolship to capture microbes from the air.
After aging, the beer was refermented on a large amount of raspberry. The native yeast gives a subtle funk and pleasing dryness to the soft wheat malt backbone, which showcases the clean and bright acidity from the fruit.

Draught @ MBCC 2018. Pours hazy red with a light pink head. Aroma of light sourness, wheat, tart fruit, red berries, raspberry. Flavor is sour, wheat, tart fruity, raspberry. Medium body, average carbonation, acidic finish. 130518
