PHAZOTRON is a sessionable wheat beer that was fermented using the resident wild yeast from house-crushed Merlot grapes from Colterris Wines in Palisade, Colorado. The grapes were used not necessarily for flavor, but for the microflora that is resident on the skins, allowing for a type of spontaneous fermentation which is quite different from our normal use of a coolship to capture microbes from the air.
After aging, the beer was refermented on a large amount of raspberry. The native yeast gives a subtle funk and pleasing dryness to the soft wheat malt backbone, which showcases the clean and bright acidity from the fruit.

Sample @ MBCC 2018. Pours dark hazy red with a small pink head. Aroma has dark berries, grapey notes, esters, salty earthy minerals. Taste has berries, grapes, lactic acidity, sweet vinous finish.

Draught @ MBCC'18 [ Gold Session ]. - Mikkeller Beer Celebration Copenhagen 2018, Øksnehallen, Halmtorvet 11, 1700 København V, Danmark.[ As Black Project Phazotron - Raspberry ].Unclear - hazy matt medium red colour with a small to average, frothy, good lacing, mostly diminishing, off-white - pink head. Aroma is moderate malty, wheat, moderate yeasty, dough, yogurt, raspberry, berries, jam, grapes. Flavor is moderate sweet and light moderate acidic with a long duration, tart, raspberry, yogurt, grapes, citric, medium dry. Body is medium, texture is oily to watery, carbonation is soft. MBCC Sunday session, 'No riff raff'. Keg. Hazy raspberry colour beer, small pink head. Thin dry palate, decent fine carbonation. Pretty tart raspberry jam. Mild lemon acid. Light dry finish. Too much for me.

Keg at MBCC Bronus Gold session, 13/05/18. Cherry red with a decent crimson covering. Nose is tarte berries, grape must, funk, damp hay. Taste comprises berry pips, stoned fruits, barnyard esters, funk, grains, raspberry yoghurt, damp cloth. Medium bodied, fine carbonation, drying close with a light acidic rise. Decent.
