The Barrel & Bramble is a Lambic style sour cider – made with Certified Organic Washington apples— with a berry fruit finish, for which 6 barrels of cider were each fermented and soured slightly differently. This cider spent some time in the country and left to ride in barrels outside of the barn for another 3 months, tugging the horse and leather notes from the ferment, while the acids married and esterified. All were blended together and then we added organic whole black currants from Methow Farms and let it all steep for 2 months to meld together, and then conditioned to a light sparkle. Some sediment remains from the process. Fermented with three strains of Brettanomyces yeast, then soured with Pediococcus and Lactobacillus. This blend was gently oaked and the black currant imparts subtle tannins and aromas of deep summer forest trails.

Capped 500 from Tavour. Pours clear bright but somewhat dark cherry red. Aroma of light pedio and some apple. Near med body. It's quite tart and there's a strong flavor of black currant. Very dry. Wood astringency makes it seem bitter. Otherwise pedio with a little Brett. Very approachable.

On tap at Schilling Cider House - Seattle, pours a mostly clear amber with a small beige head. Aroma has wild yeast, light bramble berry pie, and some oak. Flavour is complex, with lots of wild yeast, bramble berry, and oak. Nice funk and berry character on the finish. Very nicely done.
