In collaboration with Blue Star Donuts, we made a base beer with French pale malt, biscuit malt, and toasted rice flakes as our ‘brioche’, then added cinnamon to the mash and the boil. After fermentation we made a thick orxata with rice flour and cinnamon and injected it directly into the finished beer, giving it a nice hazy look with an added cinnamon flavor and aroma. Lightly malty, with light sweetness and the cinnamon helps to finish dry, I get some orange blossom notes as well.
