This new soft and balanced IPA recipe stems from our love for Mosaic. A cornerstone hop since our earliest IPAs, we still love combining it with old and new varietals.
Here we team it up with modern Strata hops for a dank aroma that leads into bright passion fruit and classic Columbus to add balance with a bright citrus and herbaceous character. Paired with Mosaic, these hops bring a full spectrum of flavour, from ripe fruit to a savoury finish you might expect in a modern New England IPA.

440ml can from Love Wine in Jersey. Pours a hazy yellow with a white head. Aromas & tastes of citrus, pineapple, mango, peach, biscuit, grain & malt. Moderate body. Somewhat dank hop finish. Very enjoyable

Draught@TCBW2023. Hazy yellowish golden colour with a small white foamy head. Aroma is floral, fruity, nectary and some oaty tones with mild biscuits as well. Flavour is fruity, nectary, tropical fruits, pineapples and some mild oaty and vanilla tones to it. Very refreshing.

Can at home from Cloudwater online. Pours murky pale yellow gold with a decent white cap. Aroma is ripe juicy stone fruit, dank hop, a little grain malt. Taste is ripe juicy stone fruit, biscuit malt, cereal, a little dank hop on the finish. Decent enough IPA.

Can at home picked up from 73 Enid Street. A translucent golden orange coloured pour with a lasting fine white head. Aroma is big pithy citrus, onion, chive, waxy citrus, green citrus, waxy jacket. Flavour is composed of semi sweet, rounded, floury wheat, grassy citrus, dank, onion, flaky wheat, green citrus, pithy, green mango. Palate is flaked wheat, tangy citrus, Really nice green citrus. chalk highish carbonation.

Appearance is bright orangey golden, with a 1-2 finger foamy head. Aroma is orange, stewed hoppy fruit, passionfruit, grapefruit hints. Taste is stewed fruit, orange, mango, gooseberry hints, soft hoppy fruit, peachy notes, bit of tinned fruit salad.

Can from House Of Trembling Madness. Hazy deep golden body with an off-white head that fades. Low carbonation. Faint lacing. Aroma of green tea and lavender. Flavour of pineapple and mango. Medium body with a smooth texture. Soft fizz. Juicy and pungent.
