It’s a rendition of an age old monastery beer, but done the 8 Wired way. Brewed and dry hopped with NZ grown Styrian Golding Hops, fermented with a Belgian yeast and refermented with Brettanomyces. 8 Wired’s homage to Orval - try them both side by side!

26/12/2019. Bottle from Hopsters, Ipswich. Pours clear bright amber with a large foamy lasting white head. Aroma of toffee, malt, yeast, fruit, hops, biscuit and very slight herbal medicinal notes. Medium sweetness and light bitterness. Medium body, oily texture, fizzy carbonation. Good brew, though too fizzy.

Bottle. Color: Slightly hazy golden to amber, large frothy white head. Aroma: Sweetish, malt, some hop, stone fruit and wild yeast funk. Taste: Complex combination of moderate to medium sweet, sour and bitter, notes of stone fruit, hints of red fruit and pretty strong goaty Brett funk. Over medium body, below average carbonation. Starting somewhat more to the sweet side and finishing somewhat more to the bitter and Bretty side. Well balanced and nice complexity. Compared with Belgian monastry beer, this one reminds me most of Orval, although this 8 Wired beer has more complexity. Very good.

Smooth and soft palate, fine carbonation. Well balanced, rather clean for a Belgian Ale.
