When we set out to create this imperial stout, we wanted to craft a beer that was bold and rich, while not being overly sweet, thus forgoing any additions of lactose or other adjuncts. Aging in Henry McKenna 10 Year bourbon barrels adds wonderful notes of toasted oak and smooth vanilla to the roasty, dark chocolate flavors of the underlying malts.

Although we're probably best known for our Rhino Suit series of imperial milk stouts, with this beer we aimed to strike a balance of boldness and dark chocolate richness, without the added sweetness of lactose, allowing the base malts to shine. Maturation in Henry McKenna 10-year bourbon barrels infuses the beer with delightful bourbon nuances and a silky veil of vanilla to balance the robust roast character of the underlying malts.
If you love dark chocolate, black coffee, and big stouts, Oak & Ember just might become a new favorite with its harmonious blend of deep roast, bold chocolate and bourbon-kissed warmth.

Tons of whiskey notes and chocolate notes, deliciously smooth even though it's boozy, I like my cakes boozy.

500mL bottle. Pours black with minimal beige head. Aroma has really nice dark malts and bourbon. Flavour has toasty bready malts, nice bourbon character. Not super complex. Nice malt and bourbon characteristics, but not particularly well-incorporated. Mouthfeel is kind of sludgy. The components are here, but needs a bit of tuning. Not really the quality I would have expected from this brewery.

500mL bottle, pours black with a small tan head. Aroma has plenty of oak, subtle bourbon, medium roast, and some lightly smoked meat. Flavour is quite dry, with plenty of oak, medium roast, and very subtle vanillin. Medium-bodied, with a somewhat sludgy palate. It's not terribly complex or elegant, and that palate leaves plenty to be desired. Decent, but underwhelming for Alesong.
