The blend of this beer, for the first time, comprises beers brewed entirely during one cool season, beginning in late summer of 2021 and ending just before spring of 2022. The blend was constructed following the summer equinox of 2023, two years after the bulk of the beer was brewed. This, to me, represents the saison equivalent of the 3/2/1 geuze blend. It is a beer representative of a single brewing season, aged for an optimal time.
Prior to working on the 2023 blend, I drank some bottles of both the '19 and '21 blends and refocused my goals for the constituent barrels and style of '23. I wanted to not only think about the barrels that went into the blend at the time of blending, but to use those past bottlings to help me "see into the future" as Ron Jeffries once said to me.
I think this bottling hews much closer to '19, it certainly draws from lessons I learned as both those beers aged as to what kind of blend speaks to me after aging in bottle. We also went back to a wax style similar to what we blended in 2019. This wax blend in the light shows some subtle highlights that didn't, but it has the same "staring at the stars" kind of vibe as '19, which seemed appropriate since the beers are very similar.

750mL bottle, pours a cloudy bright golden with a small white head. Aroma is complex, with lots of rustic saison yeast, plenty of wild yeast, and a nice subtle oakiness. Flavour is buggy and dry, with a nice rustic saison yeast character, plenty of wild yeast, graininess, and a touch of oak. Integrated, grainy, rustic, and buggy in great cohesion, finishing with lively carb and a fairly dry, lightly citric finish. Excellent buggy saison.
