One year ago, we filled whiskey barrels from our neighborhood friends at both Crater Lake Spirits & Oregon Spirit Distillers with a boysenberry-fermented Baltic Porter. Once we tasted through these two sets of barrels, our team was impressed by the unique & tempting quality of both. It was clear that the original plan of blending them together would be the loss of a rare opportunity. Here we share with you that opportunity to experience the character imparted by each the rye & bourbon barrels on Boysen the Wood.

Burgundy waxed bomber from Market of Choice on Belmont in Portland, OR. Pours dark ruddy brown with a foamy beige head. Aroma of boysenberries, wood, and what I take to be rye. Med + body. Flavor is rye whiskey, boysenberries and wood. Oak. Not very astringent. Nice level of whiskey. There’s darkish treacle. Overall this makes me think of chocolate, but I can’t parse that out. Rather smooth. Not very dry, but not all that malty either. Good balance. Rye is very pleasing. Whiskey aspect is a flavor enhancer, not a detriment.

Bomber, wax dipped. There are two versions of this, I think the other one is bourbon. Pours a dark reddish brown color with a thick beige head. A big hot barrel nose. Rye whiskey, wood, heat, clear berries, toffee. Pretty hot, but smooth. Pretty nice. Sort of like a BW. Big barrel.
