We brewed this blonde ale and quickly transported it to a local organic vineyard allowing it to naturally cool in open vessels. As night set in a plethora of wild yeasts joined the celebration, and by the first light Paso Wild bubbled to life with spontaneous fermentation. After two years in French oak, one of our most deliciously complex wild ales was born with characters of sweet oat, lemon meringue and a delicate earthy nuttiness.

500 c&c from CRAFT Beer & Wine in Alameda, CA. Pours coppery gold with a white head. Mildly sour fruit aroma. Med body. Flavor is mildly citrus sour with some pale stone fruit and earthiness. Sour on the level of the average Berliner Weisse. Very approachable. A bit astringent. Overall, it is very mild and flavorful. Highly recommended. Sourness persists thru the finish. Excellent.

Draft at Modern Times Festival of Funk 2017. Clear golden color. Aroma of vinous lemon. Taste is mixed citrus.
