Low alcohol, naturally carbonated co-ferment made by the rehydration of organic Riesling grape pomace immediately after the free-run wine is removed. We hydrate with water and organic apple juice and allow the fermentation to continue in bottle to carbonate naturally.

Bottle from Brew Cavern, Nottingham. Aroma had sweet apple with a vinous edge. Lightly hazy pale gold. Thin bubbly translucent white head soon recedes. Sour with distinct apple juice. Tart vinous edge. Sulphur. Hints of sweetness into the finish. Light bodied. Watery. Flat-average carbonation. Dry finish. Crisp and dry.
