Countess is a stout that has been conditioned on Tahitian Vanilla, Tonka beans and cacao nibs. A decedent beer that's full of flavour and a perfect accompaniment to a wintry night.

Bottle from A Hoppy Place, Windsor. Aroma has an initial burst of dark chocolate with a roastiness before the Tonka comes through. Vanilla edge. Dark and glossy. Foamy tan head. Medium bitter core. Dark chocolate. Spice, cinnamon, from the beans. Woody. Sour edge. Instant coffee. The vanilla tempers the other flavours. Definitely loaded with cocoa and Tonka. But no attempt to compensate with top much sweetness. Medium bodied. Creamy. Flat carbonation. Long dry very astringent finish. Not always entirely convinced by Dolphin's beers - more down to personal preference than anything else - but I think it's fair to say that they do try something different each time rather than pandering to the crowd.
