At one time, at Fallen Acorn Brewery, we had a coffee roaster on site. He happened to have some fantastic Dark Roast Coffee that was surplus to orders - this coincided with our first pilot brew of a Milk Stout. Combined with the sweet flavours from the unfermentable sugars in Lactose, the peaty whisky flavour, the vanilla oak flavours and the delicate bitterness from the coffee, this is a fucking ace beer.
The multitude of flavours were exceptionally well balanced and this started an obsession with Milk Stouts that led to a Chocolate Orange brew with Orange Peel and Brandy, and perhaps most famously for us, our 2017 Christmas Beer; Egg Nog Stout.
Safe As Milk is a pilot name (from a Captain Beefheart track and album if you must know), we’re hoping to produce this beer for Christmas 2018 under a suitably festive name with even better Islay Whisky and Coffee than before.
