Come What May is a farmhouse style beer made without 'traditional' saison yeast. Hopped assertively and aged extensively in foeders, the blend takes on layers of refreshing and refined flavours. Crisp, bitter, and lightly tart, it's a complex beer that's easy to drink. Created as an ode to our previous collaboration with De La Senne brewery.

Owl Farm, Brooklyn tap: pours pale gold with white head. Aroma is earthy, a bit funky from the brett, wood. Taste is dry, earthy, tang. Woody notes. Lightly bitter, but nicely hopped. Pleasant with a subtle complexity.

Bouteille 500ml, gracieuseté de msjpearson, Thanks Mike! Couleur jaune dorée voilée, mousse blanche abondante et tenace. Arôme de Brett, herbacé, paille, citronné, miel. Goût de Brett, amertume moyenne-élevée, zeste de citron. Carbonatation moyenne-élevée, corps moyen.

Draught @ Schuim, Carnivale Brettanomyces '18. Hazy pale golden color. White-ish head. Aroma's: sour, funky, hint of sweetness. Retronasal it's fruity, sourish, bitterish. Flavor is moderate sour, fruity, moderate bitter. Light bodied. Finishes funky and rather bitter.

MBCC 2018. Red. Pedal to the Metal session. Keg. Light haze on this gold beer, small pale cream colour head. Airy palate, semi dry, decent fine minerally carbonation. Light malts. Mild brett and modest citrus. Dry bitterish finish. Clean but dry and bitter.

Tap at t Schuim. Hazy light golden with bright white head. Sweet malts, lots of Brett funk, hay, soft lemon, wheat, light tart grains, cellar funk, dry mineral notes. Under medium sweet and bitter, soft tart finish. Medium bodied. Nice.
