Come What May is a farmhouse style beer made without 'traditional' saison yeast. Hopped assertively and aged extensively in foeders, the blend takes on layers of refreshing and refined flavours. Crisp, bitter, and lightly tart, it's a complex beer that's easy to drink. Created as an ode to our previous collaboration with De La Senne brewery.

[5/8/18] Draught at Himmeriget in Copenhagen. Hazy golden. Brett, funky, slightly soapy, floral, fruity, oak, some hops, dry, bitter, medium-bodied. Very nice.

A nice blonde ale with a thin lacing white head. In aroma, nice biscuit malt with light Brett notes, light grassy hops, light mineral notes, nice and smooth. In mouth, a nice sweet fruity malt with light resinous floral hops, crisp biscuit malt with light lactic notes, light Brett, light cork, very nice and complex. Bottle at Bar Lupulus.

Keg at MBCC 2018 Red (session Trois), 11/05/18. Pale golden blonde with a decent off white cap. Nose is lemon rind, light brett, funk, stale bread. Taste comprises funky green berry, light pissoi, guava, on the turn melon, damp hay. Medium bodied, fine carbonation, semi drying close with a Bretted climax. Ok sour.

Draught at MBCC Red Session. Bubbly white head, cloudy pale yellow body. Spices, almost perfumed, fruity nose. Fresh taste of pineapple and brett. Mid-tart fruity ending, crispy in the mouth. Satisfying. (Copenhagen 12.05.2018).

Draft at Craft Brewed. Pours a clear gold with a finger of foam that lingers. Dry grass and herbal aromas on the nose...maybe some dried fruit..light yogurt. Slight grainy texture on the palate. Brett and horseblanket on the palate, with dried peach and floral notes. Lingering dry herbal, dried fruit finish with some faint peppery hops.
