Peach de Brettaville is a harmonious marriage of fruit and beer, bringing together our love for brett saisons and farm fresh fruit. We brewed our Saison Dolores and fermented it with twelve different brettanomyces strains, and aged it in wine barrels and our foeders with plenty of juicy peaches and nectarines.
After months of maturing and blending, this saison has developed a balance between earthy funk and stone fruit sweetness with a dry, white wine-like finish, perfect for pairing with creamy cheeses and braised pork.
Our Farm to Barrel beers focus on the eons-old tradition of aging beers in oak barrels, and our de Brettaville saisons expand upon this tradition by highlighting the magical properties of wild brettanomyces yeast. We start by brewing a bright and aromatic farmhouse ale with a blend of twelve “brett” yeast strains. After a vigorous primary fermentation, the beer is racked into wine barrels to mature. In cask, the beer takes on the complex flavors of the oak, and the brettanomyces yeast creates an exotic melange of earthy funk and tropical fruit flavors. This wild ale is alive in the bottle and will continue to mature for years.

Tap at Mission Dolores, New York. Colour is deep cloudy golden with small white head. Aromas and flavours: Fruits, peaches, sourness, some sweetness and dryness. Not bad. Juicy with lingering aftertaste.

Tap. Looks like peach nectar. Almost opaque brownish orange with a white head that doesn’t last very long. Aroma of damp hay, stone fruit bracken, hard spices, mango/ Dubbin. 7+ Don’t know whether the mango/ boot polish thing is a brett thing or a me thing. Thinnish,no sign of any slipperiness. Peach is there but its not obvious that it’s an addition. Hay, spices, tropical fruit. Still fruity despite being really pretty dry all the way. Quite sour. Brett is twiggy and spicy more than barny. Nice stuff. Not the deepest, but very refreshing.

Bottle @ hotel room 9:00am RBWG. Thanks Christer! Pours a murky orange appearance with a thin head. Kinda looks like mango juice. Aroma has lots of funk, oak, peach, and vanilla. Medium light body. Quite juicy with lots of fruit. Moderately sour. Good.

Bottle. Amber beer with a cream head. Tart aroma with peach and citrus. Tart/light sour flavor with peaches. Medium bodied. peach and tartness lingers with brett, light sour notes, and light earthiness.

Rating #1931. Bottle poured. Pour a milky fitting peach color with a disappearing head. Brett funk and soft orange fruit aroma. Growing tartness throughout, with a healthy wine presence, soured peach, and a lingering Brett and sour fruit finish. Sour, but refreshing to pair. On the juicy side late. Huge ups for the complexity here. Their beers continue to evolve to things I couldn’t imagine before. They don’t make a bad beer as far as I know, and this one happens to be one of their best that I’ve had. Still hope to one day be able to visit the taproom, but they need to open one first! Tagging my ratings with year facts for no reason at all, 1931 was the year the empire state building was completed. Amazing beer here.

Bottle. Pours cloudy arnold palmer with a fizzy small white head that dissipates to a ring with some lacing. Aroma is a mix of Bretty funk, peach flesh and skins, and a bit of earthiness. Flavor is medium plus tart, light funk, tons of peach skin and barnyard Brettiness. Hint of acetone on the finish. Medium body, creamy mouthfeel. Really solid, yet again.
