A unique botanical fermentation made with our valley Stinging Nettles. Shoots of the Nettle plant are harvested in early spring before stinging flower pods develop. Leaves are dried and cured for up to 6 months and are then left for a long rest in Agave syrup and pressed clean. The mixture is then blended with a house cider blend and fermented to dryness. A mild herbaceous quality on the nose with a nice dry apply finish.

500 ml bottle from the PDX Made in Oregon location. Pours a very hazy perry color with a fizzy white head that left quickly. Aroma of greenish apples, and something herbaceous. Med minus body. It is dry green apple with herb/veg aspects. Really dry.
