Saison M is the 5th member of Ron Jeffries non-alphabetic Letter Series. Saison M was brewed with all ingredients sourced from our great state of Michigan. The grains – Pilsner, Spelt and Munich 10, were all malted by our friends at Pilot Malt House and the Cascade and Chinook hops come from Churchkey Farms. Our process of open fermentation allows the natural occurring wild yeast of Dexter to also work its way into this beer, resulting in the Michigan trinity we are proud to call Saison M.

Saison M is a well-balanced confluence of Michigan agriculture with notes of lemon, pineapple, and resinous pine. Mild bitterness washes over the tongue before giving way to hints of oak and moderate acidity.

Nwarvik, giant captive protector beetle of the southern mouse people steadfastly carries castles of invaders to consume and burn the lush and fertile fields and forests of the far north in violent century old retribution for the sins of fathers long dead - Will the ice crystalline palaces and inky indigo lakes survive the night…?

We grew here, you flew here.

Tap @Taphouse. Cloudy golden, white froth. Fruity, funky aroma, vinous with a little wet horse. Funky, citrusy flavour. Yeasty spice, brett and citrus peel. A little rough.

From tap. Pours cloudy yellow. Small white head. Aroma is peach fruity. Slight citrusy. Mellow. Sour. Fruity. Mild estery. Slight bretty. Light sourish finish.

Tap @ Mig & Ølsnedkeren, 7.1%. Hazy amber with small off-white head. Aroma is malt, fruit, yeast, brett, lemon and grass. Flavour is malt, fruit, brett, lemon, medium sweet, medium dry, little pepper, peach, fruit peel and medium bitter.

Draught @ Mig & Ølsnedkeren. Pours slightly hazy golden with an offwhite head. Aroma of malt, yeast, light bretty, wet wood, oak, tart fruit, green peach, pineapple, citrus. Flavor is light sour, light sweet, malt, yeasty, wood, tart fruit, peach, pineapple, apricot. Medium body, average to lively carbonation, dry and light acidic finish. 130118

Slightly hazy deep golden color. Nice funky nose of apricot crumble, oak, a touch of brett and nice underlying tartness. Nice dry mouth, with modest hoppiness and modest tartness. The apricots shine and the pilsner malt give it a nice cleaness. Nice dry finish. Not really authentic, but highly enjoyable.

Bottle thanks to my mom! Pours a hazy yellowish orange with a white head that dissipates slowly to the edges. Aroma has notes of citrus and Belgian yeast with light grains and straw supporting. Flavor has earthy grains, grass and earthy citrus with some light flora supporting.

750 ml bottle into tulip glass, bottled on 7/12/2017. Pours slightly hazy medium golden yellow color with a 2 finger dense and rocky white head with fantastic retention, that reduces to a nice cap that lasts. Nice dense soapy lacing clings around the glass, with a good amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big lightly tart lemon, lime, orange, grapefruit, peach, pear, pineapple, apricot, red apple, melon, white wine, peppercorn, pine, oak, hay, straw, herbal, floral, grass, wheat, cracker, white bread dough, light leathery/musty funk, and yeast/oak earthiness. Damn nice aroma with great balance and complexity of fruity/funky/spicy yeast, citrus/pine hops, oak barrel, and moderate bready malt notes; with great strength. Taste of big lightly tart lemon, lime, orange, grapefruit, peach, pear, pineapple, apricot, red apple, melon, white wine, peppercorn, pine, oak, hay, straw, herbal, floral, grass, wheat, cracker, white bread dough, light leathery/musty funk, and yeast/oak earthiness. Moderate peppery yeast spiciness, light-moderate pine/grassy bitterness, and light lactic tartness on the finish. Lingering notes of tart lemon, lime, orange, grapefruit, peach, pear, pineapple, apricot, red apple, melon, white wine, peppercorn, pine, oak, hay, straw, herbal, floral, grass, wheat, cracker, white bread dough, leathery/musty funk, and yeast/oak earthiness on the finish for a good bit. Incredible complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/pine hops, oak barrel, and moderate bready malt flavors; with an awesome malt/bitter/spiciness balance, and zero astringent hop/oak flavors after the finish. Moderate increasing dryness from bitter/spiciness and carbonation. Medium-high carbonation and medium body; with a very smooth, moderately crisp, bready/grainy/sticky, and lightly acidic/tannic balanced mouthfeel that is awesome. Zero warming alcohol for 7.1%. Overall this is a fantastic wild saison! All around outstanding complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/pine hops, oak barrel, and moderate bready malt flavors; very smooth, crisp, and refreshing to drink; with the balanced bitter/spicy/drying finish. Awesome classic JP house funk and saision yeast complexity; with nice Cascade/Chinook hop and oak barrel presence. Balancing Pils/Spelt/Munich malts, with no residual sweetness. A highly enjoyable offering, and spot on style example.
