Farro Medio, commonly known as Emmer is amongst the first ancient cereal grains cultivated and is now experiencing a resurgence due to its hearty nature, ability to grow in poor soils and deep flavor. A significant portion of Connecticut grown Emmer was added to the mash with locally grown and malted barley. This beer is brewed with well water from our farm, a gentle addition of aged hops and fermented in stainless with our native mixed culture blend before being transferred into recently emptied red and white wine barrels for further maturation. Individual barrels were selected for a final blend and re-fermented in the bottle with local honey from Beavertide Farm in Falls Village, CT.

Bottle: pours light gold with a fast dissipating white head. Aroma is lightly funky, woody, definitely getting some pasta or grain, vinegar. Taste is lightly sour. Light tree. Winy notes. Subtle and complex.
