Recently we teamed up with the esteemed, California-based, internationally recognized, 100% oak aged brewery Horus Aged Ales, to create a chocolate-centric beast called BOP (Bird Of Prey).
Upon a strong foundation of roasted malts and an 8 hour boil to concentrate all those fermentable sugars, we added a mammoth amount of high-quality Ghanaian cocoa nibs — at a ratio 3X that of our dry-hopping rate. The result is layers of rich, fudgy, intense flavour.
And because we wanted to honour the MO of Horus, we also transferred a portion of this beer into a combination of specially selected bourbon and rye barrels, in order to meditate for the next several months.

Low tan head on a near black body. Nose is rich dark chocolate with cream and roasted malt. Dark Chocolate, chocolate syrup, butter, roasted malt, a hint of rye and some coffee bitterness. Dense, slightly sticky body, in characteristic Bellwoods IS style. Sweet but well balance for a dessert stout. Sustains really well.

Jet black, oily, thick, and luscious. Huge cocoa aroma, black Forest cake, cocoa powder, bits of soy and coffee. Burnt molasses, sugars, toffee, sweet teriyaki.. Silky, smooth, medium to high bitterness. Savoury, thick chocolate cake in a glass. Wow.

Chocolate, roast. Really strong smoky background that makes this fun. Pours black with good head and lacing. Finishes with booze. Some caramel there but predominantly bitter. Pretty nice. Tap at Snally.

Draft at Snallygaster 2024. Poured a black color, dark cola. Brown head. Aroma was big oaky, vanilla, chocolate, cacao. Huge dark chocolate, taste like a dark chocolate candy bar, such a good beer.

(500ml bottle c/o Herbalist, thanks!) Pours black with a snall tan head and some spotty lace. Aroma of dark chocolate as promised, the unsweetened and earthy cacao component mixed with bittersweet baker's chocolate, some dark molasses malt and a bit of burnt grain managing to just peek out from beneath the choc onslaught. Flavour sweeter than the bitter chocolate nose would suggest up front, very much the sweetened high percentage dark chocolate, a bit fudgy, bittersweet vibes, supporting dark malt, molasses touches, drying out mid sip where the earthy bitter component of the chocolate becomes more pronounced, hits of roast acidity peeking through, aftertaste is dry and somewhat bitter chocolate/cacao, light alcohol warmth. Full-bodied, syrupy fudgy texture with low carbonation. Very nice stuff, sure it's totally chocolate-forward but it does it well and with quite a rich mouthfeel for 9%. Very eager to see the BA version see the light of day, but also happy it hasn't because a long rest in oak would work well for this beer.

Bottle at Bar Kaja. Black with a medium tan head. Sweet with chocolate, mild roasted malt, bourbon and syrup.

Bottle: Poured a pitch-black color stout with a dark brown foamy head with some retention and some light lacing notes. Aroma of rich black chocolate notes with some nice bourbon notes. Taste is also a mix of rich black chocolate notes with some bourbon notes and residual sugar notes. Body is full with a syrupy texture and medium carbonation with some alcohol notes that are discernible. Solid BA stout with great rich chocolate flavors.

500ml (thx, Peter K.!) shared with Phill @ Ryan's. Appearance: very dark brown with a beige head. Aroma: roasted malts, sweet, chocolate, some molasses. Taste: along the same lines, nice body and balance. Overall: good one.

Poured from 500mL bottle (pkg 24 Feb 2023). Very dark brown with small tan head. Coffee, mild chocolate malt, feint oak backing, enjoyable.
