Bottle: Poured a slightly cloudy pale yellow color cider with some very aggressive carbonation. Taste is a complex mix of apple notes with some light funky ester and some light vinous notes. Body is full. Super creation and would love to have regular access to this cider.

(750ml bottle from L'Axe du Malt, Quebec City) Pours quite yellow-gold with a huge gush and loose rapidly dissipating head with ongoing soda pop carb. Aroma is surprisingly complex fruit layers, with very floral apples, tangerine, peach, lychee and white grape, light hay funk, minerality. Flavour is surprisingly dry and barely tart, with light residual sugar; again a mix of floral apple, peach and orange zest, dry white wine hints, mineral petrichor (amphora?) dusty hay funk. Very dry mineral finish, touch chalky, persistent floral apple flesh and soft grapey tannin finish. Light to medium bodied, slight tannic chewiness, filling carb. Interesting cider, real pop to the fruit profile and an atypical ferm/aging vibe. Rather pricey for what it is, but nice production.
