We have aged our imperial stout over 9-months in bourbon barrels. Through barrel aging the bourbon flavor blends seamlessly with the maltiness of the stout and also gives a subtle oaky finish. It has a complex flavor but finishes remarkably smooth and clean. It is perfect for holidays and sipping by the fire on a cold night.

IP trade with johnnnniee, thanks. Catching up on backlog, although the boozy may have reduced in the 5 months if I waited til now to have it. Mini can Retaining lt brown-black. A-nice bourbon, vanilla, dk malt with a bit of heat. T-boozy/hot, woody, dk malt-roasty/chocolate, vanilla.

750 ml bottle purchased at the brewery in February 2020. 2019 vintage is 9.3%. A brewery employee showed me that this vintage was aged in Heaven Hill barrels. Aroma is bold oak with soft chocolate. The flavor shows the bold oak character with very little bourbon. Body is average for the style. Dry texture. Some warming after the sip.

Bottle from the source enjoyed at home. Deep black in color with a good sized tan head that persists. Rich roasty chocolate and bready sugary maltiness. Light bourbon and a faint tart cherry lactic note. Pretty decent stout but could have used a bit more of the barrel or bourbon to come through.

Taster pour at the brewery. Appearance is dark brown with finger-width beige foam head and nice lacing. Aroma is mild bourbon. Taste is mild bourbon and dark fruits. Palate is medium bodied with smooth texture, soft carbonation and sweet finish. Overall, very nice. Though the bourbon is pretty restrained, it still dominates the base stout. Very smooth, pleasant and comforting like a warm blanket.
