Wild beer with South Moravian fruit. Summer in taste and smell. As a basis we use beer aged for 9-12 months in oak barrels. We add fruit and allow the beer to re-ferment to dryness. The result is “Fly with me”, our first spontaneously fermented wild beer with fruit. All together we spent cca 2 years with this beer. Tercial fermentation is done in the bottle you buy in the shop.
Sour cherries – great Moravian fruit with typical juicy aroma and fresh sour taste. No unknown foreign suppliers, just local farmers again.

At Wild Festival Groningen, 10cl from tap. Color: Red, pink head. Aroma: Red wine, tart, cherry. Taste: Tart, red cherry-wine, moderate sour, light sweet and some hopbitterness. Sweet and sour cherries. Refreshing. Bit foamy mouthfeel.

Sampled at Wild Festival Groningen. Hazy dark reddish purple with dark pink head. Yoghurt, rotten herbs, balsamico, deep funk but in a bit of a nasty rotten way, puke, more cherry yoghurt, popcorn, glue, battery acid. Quite sour and medium sweet, light bitter. Solid medium bodied. No thanks.

Reddish brown with an off white head. Aroma of vinegar, sweet cherries. Ah damn this is bad. Flavour is above moderate sweet and sour. Drinking vinegar. Medium bodied with soft carbonation.

0.33 l bottle thanks to Marko who brought it from Prague. Shared with Ogi and him. Dark ruby red, minimal head. Aroma is acidic, sour dark cherries, some vinegar. Light Brett presence? Cheese, dust. Light phenols in flavour, glue. Cherry juice. Tart. Quite sour. Puckering, a heavy acidic bite in the finish. Gentle red fruit lingers. Wonderful sourness.

Bottle from Base Camp. Lovely red body, pinkish head, gone fast. Tart, funky aroma, big cherries, cherry vinegar - if that exists. Very pleasant, dry, balanced taste, cherries dominating, fresh, tasty, the sourness is not overdone. Juicy, tasty, the most impressed I've been with one of their beers, beating hands-down most Belgian examples I've had.
