Wild beer with South Moravian fruit. Summer in taste and smell. As a basis we use beer aged for 9-12 months in oak barrels. We add fruit and allow the beer to re-ferment to dryness. The result is “Fly with me”, our first spontaneously fermented wild beer with fruit. All together we spent cca 2 years with this beer. Tercial fermentation is done in the bottle you buy in the shop.
Sour cherries – great Moravian fruit with typical juicy aroma and fresh sour taste. No unknown foreign suppliers, just local farmers again.

Bottle 0.75l. Almost clear, red colored. AROMA- leather, shoe cream, fruity tones, cherries. FLAVOR- moderately sour, neutral, cherries, leather, farmyard. Medium bodied.

Bottle 330ml. @ [ The Stat Improver Tasting ] - Saxo, Højbjerg - Aarhus, Denmark. [ As Wild Creatures Fly with me "Sour Cherries" ].Clear light to medium red colour with a small to average, frothy, good lacing, mostly lasting, off-white to white head. Aroma is barnyard, leather, funky, cherry, apricot, band-aid. Flavor is moderate sweet and light acidic with a long duration, cherry, apricot, tart, plastic - medicin. Body is medium, texture is watery, carbonation is soft. [20170617] 6-3-4-3-8

Bottle at U Kunstatu, Praha, 13/07/17. Claret red with a crimson cap that dissipates in time. Nose is cherry cough drops, straw, light funk, damp wood, light acidic whisper. Taste comprises tarte cherries, dry rot, funk, restrained acidity, cherry skins. Medium bodied, fine carbonation, drying close. Decent enough lambic but would have preferred a slightly more sour base.

Bottle at Højbjerg tasting. Pours pink/red with a small bubbly pale pink head. Aroma of yeast, apricot, sour cherries, plastic and card. Light sweetness, medium sour. Medium body, slight oily texture, average carbonation.

Bottle @ Johns. Pours reddish golden with an offwhite head. Aroma of light sourness, wood, yeast, tart fruit, cherries, light almond, do get a light burnt plastic note to. Flavor is light sweet, light sour, wood, yeast, tart fruit, cherries, cherry stones. Medium body, average to lively carbonation, light acidic finish. There is some light phenol/plastic notes, but overall still pretty nice. 7-4-7-3-14. 170617
