Smoked eel has long been a specialty of the Siphon restaurant. The eels are smoked in a hut right beside the brewery. We huddle around the ashes on Autumn brew-days.
Cendre is a blend of styles from a variety of countries, with the chocolate malt character of a British stout, the seductive melon and pine profile of an American IPA and the drying citrus qualities of a Belgian Saison.
Malt: pale, munich, special b, chocolate, chocolate wheat. Hops: Citra. Yeast: saison EBC: 78.

Pours black. Aroma and flavor are sweet and bitter,roast, dryness, malt, chocolate, slightly acidic. Overall: good.

29 June 2019. At Siphon 3d Birthday Party, Damme. Cheers to Anke, Erwin & Ama Deke! Hazy dark brown-black with a lasting, small, foamy, tan head. Aroma of dried banana, wheat, black pepper, toast, fondant, salty licorice, black olive, fig. Taste is light malty sweet, restrained dark fruits & chocolate revolving around a bitter core of toast, pepper, orange peel & cofee roast, a bit wheaty sour underneath with touches of (almost salty) licorice. Dry, toasty, earthy hoppy finish, lingering dark fruits, cocoa, yeast. Medium body, slick texture, soft carbonation. Interesting 'blend' for sure!

Flaska från belgiuminabox. Opak, närmast svart vätska med en krämig skumpuck. Rostad dofter med en hel del fruktig c-humle bakom. Mjuk len havrekrämig kropp, och som kontrast rostade riktigt torra smaker av choklad, aska och trä. Rejäl men snabbt avklingande beska. En ganska märlig dryck på ett sätt ganska svår men ändå inte. Len och kärv på samma gång. Trevlig.

Keg at the Beer Merchants Tap - Hackney Wick. Pours deep brown with a lasting, creamy tan head. Well rounded, has some pleasant citrus fruit accents, bitter ash and baking cocoa, burnt grass. Medium bodied with fine to average carbonation and velvety texture. Bitter finish, more ash, cocoa, scorched earth, orange rind. Sound.

Draft @ BBP Beer X-mas Party. Brune col blanc-cassé. Arôme offre un nez marqué par des effluves de malts, le tout est fin grillé, caramel et pâle sur un rétro-nasal léger au niveau des houjblons - retrouve un côté fruité, tropical - agrumes et léger résineux. Tout cela reste plutôt en retrait. Palais est malté sur une base de grains qui donne un profil sec, finement poussiéreux. Houblonné fin fruité et fleuri avec impression de c-hops. L'approche des malts s'éloigne un peu du côté US des black IPAs - le tout garde un fini belge au niveau de la levure.

Shared bottle @ tasting with TomHendriksen, Inoven and Roelzie86. Dark brown, a bit red-brown with a red glare coming through when held into the light. Medium to full sized beige to light brown colored head. Aroma is unpleasant unfresh sweaty and rotting something. Dead rotting baby birds who tried to fly out of the nest, but died in a pool of water and have been rotting for at least a week. Bleh. Taste malts, brown malts, metallic, malt bitter. Thin texture, average body and carbonation. Oh that smell...
