Smoked eel has long been a specialty of the Siphon restaurant. The eels are smoked in a hut right beside the brewery. We huddle around the ashes on Autumn brew-days.
Cendre is a blend of styles from a variety of countries, with the chocolate malt character of a British stout, the seductive melon and pine profile of an American IPA and the drying citrus qualities of a Belgian Saison.
Malt: pale, munich, special b, chocolate, chocolate wheat. Hops: Citra. Yeast: saison EBC: 78.

Clear dark brown beer, small irregular beige head, little stable, bit adhesive. Aroma: lovely stuff, some tropical fruits, grapefruit, nice roast, really nice. MF: soft carbon, medium body. Taste: some citrus, nice bitterness, very roasted, tropical fruits, bit sourish, very nice balance. Aftertaste: very bitter, harsh roast, charcoal, lots of citrus, grapefruit.

New Siphon beer, a BIPA fermented with saison yeast. At Hedonis Ambachtsfest. Thick, moussy, dense, papery lacing, stable, pale yellowish beige head over a misty dark chestnut brown beer with ruddy hue. Aroma of pine resin, liquorice candy, hazelnut shells, damp earth, dusty old black chocolate, bayleaf, dried orange peel. Dryish onset, some elderberry-like sourishness mixed with subdued old raisin sweetishness, leathery touch, medium carbo, fluffy and lightly oily mouthfeel. Nutty, toasty middle with softening caramelly malt edges, long drying, spicy finish, earthy but elegantly piney and a tad zesty as well, bittering. Rounded and spicy, bitter and dry, a very nice beer indeed, somewhat reminiscent of BBP's Black Bird (in collaboration with Anspach & Hobsday) but less clean, more earthy (I guess this is supposed to be the 'saison' side of it) and -in that sense perhaps less charming.

Pours muddy brown, small white head. Smell is mild grassy, aromatic, some chocolate. T is full, bitter, bit thin, on another levelbyou go thte aromas. Creamy chocolate , citrussy. Ok.
